Veggie Stir-Fry with Tofu – Quick & Colorful

This tofu stir-fry is a crunchy, colorful plate of goodness. It’s packed with protein and loaded with veggies, making it a perfect weeknight dinner.

Ingredients:

  • 1 block firm tofu, cubed
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 bell pepper, sliced
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 2 cloves garlic
  • 1 tsp grated ginger
  • Cooked rice or noodles

Instructions:

  1. Pan-fry tofu until golden, then remove and set aside.
  2. In the same pan, sauté garlic and ginger in sesame oil.
  3. Add all veggies and stir-fry for 5–7 minutes.
  4. Return tofu to pan, add soy sauce, and toss well.
  5. Serve over rice or noodles.
