Creamy Mushroom Risotto – Comfort in Every Bite

This classic Italian risotto features creamy arborio rice infused with garlic, white wine, and savory mushrooms. It’s comforting, elegant, and 100% vegetarian.
Ingredients:
- 1 cup arborio rice
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic
- 1 cup mushrooms, sliced
- ½ cup white wine (optional)
- 3 cups vegetable broth
- ¼ cup grated Parmesan
- Salt, pepper, and fresh parsley
Instructions:
- Heat oil and sauté onion and garlic. Add mushrooms and cook until browned.
- Stir in rice and cook for 2 minutes. Add wine if using.
- Gradually add broth, ½ cup at a time, stirring until absorbed.
- Continue until rice is tender and creamy (about 20 minutes).
