Creamy Mushroom Risotto – Comfort in Every Bite

This classic Italian risotto features creamy arborio rice infused with garlic, white wine, and savory mushrooms. It’s comforting, elegant, and 100% vegetarian.

Ingredients:

  • 1 cup arborio rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic
  • 1 cup mushrooms, sliced
  • ½ cup white wine (optional)
  • 3 cups vegetable broth
  • ¼ cup grated Parmesan
  • Salt, pepper, and fresh parsley

Instructions:

  1. Heat oil and sauté onion and garlic. Add mushrooms and cook until browned.
  2. Stir in rice and cook for 2 minutes. Add wine if using.
  3. Gradually add broth, ½ cup at a time, stirring until absorbed.
  4. Continue until rice is tender and creamy (about 20 minutes).
  5. Stir in Parmesan, season, and serve hot.
