Caprese Stuffed Avocados – Fresh & No-Cook

A refreshing no-cook recipe that’s perfect for warm days. Creamy avocado, juicy tomatoes, and mozzarella make this a light but flavorful vegetarian dish.

Ingredients:

  • 2 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • ½ cup mozzarella balls (bocconcini)
  • Fresh basil leaves
  • 1 tbsp balsamic glaze
  • Salt and pepper

Instructions:

  1. Scoop out some avocado to make space.
  2. In a bowl, mix tomatoes, mozzarella, and basil.
  3. Season and spoon into avocado halves.
  4. Drizzle with balsamic glaze and serve chilled.
