Veggie Stir-Fry with Tofu – Quick & Colorful

This tofu stir-fry is a crunchy, colorful plate of goodness. It’s packed with protein and loaded with veggies, making it a perfect weeknight dinner.
Ingredients:
- 1 block firm tofu, cubed
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 bell pepper, sliced
- 1 zucchini, chopped
- 1 cup broccoli florets
- 2 cloves garlic
- 1 tsp grated ginger
- Cooked rice or noodles
Instructions:
- Pan-fry tofu until golden, then remove and set aside.
- In the same pan, sauté garlic and ginger in sesame oil.
- Add all veggies and stir-fry for 5–7 minutes.
- Return tofu to pan, add soy sauce, and toss well.
- Serve over rice or noodles.
