Chickpea & Spinach Curry – Rich, Spicy & Satisfying

This comforting Indian-inspired curry is made with pantry staples like canned chickpeas and coconut milk. It’s vegan, flavorful, and ready in just 30 minutes.

Ingredients:

  • 1 can chickpeas, drained
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 onion, chopped
  • 1 tsp curry powder
  • ½ tsp cumin
  • 1 can coconut milk
  • 2 cups fresh spinach
  • Salt to taste

Instructions:

  1. Heat oil in a pan. Sauté onion, garlic, and ginger until soft.
  2. Add spices, then chickpeas and coconut milk. Simmer for 10 minutes.
  3. Stir in spinach until wilted.
  4. Season to taste and serve with rice or naan.
