Stuffed Bell Peppers – Hearty and Healthy

Colorful, nutritious, and delicious—these stuffed bell peppers are a well-balanced dinner that’s easy to prepare and full of flavor.
Ingredients:
- 4 bell peppers (any color)
- 1 cup cooked rice
- ½ lb ground beef or turkey
- 1 cup tomato sauce
- ½ onion, diced
- ½ cup shredded cheese
- Salt, pepper, and Italian seasoning
Instructions:
- Cut tops off peppers and remove seeds. Preheat oven to 375°F (190°C).
- Brown ground beef with onion. Add rice, tomato sauce, and seasoning.
- Stuff mixture into peppers and top with cheese.
- Place in baking dish with a little water. Cover and bake for 30–35 minutes.
- Uncover and bake 5 more minutes to melt the cheese.
