Stuffed Bell Peppers – Hearty and Healthy

Colorful, nutritious, and delicious—these stuffed bell peppers are a well-balanced dinner that’s easy to prepare and full of flavor.

Ingredients:

  • 4 bell peppers (any color)
  • 1 cup cooked rice
  • ½ lb ground beef or turkey
  • 1 cup tomato sauce
  • ½ onion, diced
  • ½ cup shredded cheese
  • Salt, pepper, and Italian seasoning

Instructions:

  1. Cut tops off peppers and remove seeds. Preheat oven to 375°F (190°C).
  2. Brown ground beef with onion. Add rice, tomato sauce, and seasoning.
  3. Stuff mixture into peppers and top with cheese.
  4. Place in baking dish with a little water. Cover and bake for 30–35 minutes.
  5. Uncover and bake 5 more minutes to melt the cheese.
